A love for beauty, craftsmanship, and culinary traditions that have conquered the world are just a few of the common traits shared by many cultures, including Japan and Italy.
These traits are embodied in the gastronomic history of Chef Niimori Nobuya, who was born in Tokyo in 1973.
Niimori began his culinary journey by learning authentic Japanese techniques before moving on to work at an Italian restaurant in Tokyo

Thus, his love for Italy was born. He left Japan over 20 years ago to truly immerse himself in the roots of Italian cuisine.

His daily work alongside great Michelin-starred chefs has only heightened his experience, allowing him to experiment and combine techniques from both culinary worlds.

He completes his return to his culinary roots by working with Japanese chef Nobu Matsuhisa at Nobu Milano.

He worked as the head chef at Sushi B in Brera until 2018. During this time, he gained recognition in Milan as one of the most highly regarded chefs of authentic Japanese cuisine. He is known for his elegant and beautiful dishes.

Chef Niimori has now embarked on a new journey with the Nobuya project. He aims to personally welcome guests and share his story with them through his food and words. This new project will allow him to showcase the path and techniques he has developed to become an extraordinary chef. Today, Chef Niimori has opened NOBUYA, a restaurant where he can personally welcome guests and share his extraordinary culinary journey through his dishes and his words.
